Carrot soup benefits

Carrot soup is one of my favourite and sure is a vitamin bomb for your body.


If you think that soup isn’t a meal to have in, I hope this recipe (for healthy & delicious carrot soup) will make you change your mind. I always (and I mean it) really enjoy a warm bowl of good soup, even on a sunny days. Beside vitamin 'overload' helps you to stay hydrated, so it could be your favourite choice after a good workout session too ;). This simple recipe for healthy soup is full of my favourite spices and carrots.


Now that summer season is slowly approaching, a lot of people will start cutting down (which means they will be handling a low calorie intake for a certain period of time to lower their body fat without losing too much muscles ;)). And this soup can perfectly fit into this.

My recipe for carrot soup contains almost no calories and provides you with lots of vitamins. Carrots are especially a great source of beta-carotene, which is a very effective antioxidant (remember this). This beta-carotene is partially converted in the body into vitamin A, which gives multiple benefits, not only for your eyes but also for your blood vessels and overall immune system.


This soup is easy to make and does not require lots of your time either. Beside, I think it could be perfect for when you are in instant need of some good homemade food. (Yes ;)). Served with a slice of a whole wheat bread (homemade too ;)), you have got yourself a lovely light meal ;).


For this simple carrot soup you will need approx.,

– 250 g carrots

– 1/2 l water

– 1 (finely chopped) onion

– 1 clove of garlic

– 1 tsp curry powder

– 1 tsp cinnamon powder

– ½ tsp cumin powder

– ½ tsp turmeric powder

– shredded parmesan cheese

- salt / pepper to your own taste


This soup will leave you with approx:

- Energy: 160 kcal

- Protein: 5,5 g

- Carbs: 35 g

- Fat: 1,5 g

- Fiber: 10 g

Below follow my steps to prepare this delicious soup;

- Cut the carrots into smaller chunks and set aside.

- Grab a large soup pan, briefly bake the onion, add the garlic, and fry for a short moment.

- Now add the carrots and the water. Turn up the heat to make the water boil.

While the water boils, add the remaining ingredients (the curry, cinnamon, cumin and turmeric powder).

Let the soup simmer for about 15 minutes, while stirring occasionally. Add some pepper/salt to taste (if you like it a bit more spicy use mixed peppercorns)


Once you have done boiling, blend all together in a blender or mix it well with stick blender until you get a nice thick soup. The magic of all is to serve it straight away :) Sprinkle the top with shredded parmesan cheese and voila - here you go. Enjoy this delicious meal!
